I was confused, I've never heard of 'Rosti' in my nearly 72 years on this planet. So, I looked it up. To me, as a working class SE Londoner, its just plain old 'bubble and squeak'(left over potatoes and vegetables) with possibly some posh extra ingredients and a trendy posh name. Have I got this wrong or do you suave northerners have extra special cuisine that us lower types from 'dun sarf' are not allowed. We have to make do with 'cow heel and tripe' or 'pigs trotters' for our sustenance.

Gary, not for me I must admit. I prefer 'jellied eels' or 'stewed eels and mash' or 'saveloy, peas pudding and chips' with a 'pickled egg' or 'pickled walnuts'.
My late father loved tripe(cows stomach) but my mother and I hated it, even the smell. Occasionally she would weaken and cook him some tripe and onions . My first wife loved pigs trotters(front leg, from foot to knee, of a pig) but yet again not for me. I'm still troubled by the vision of her holding a well boiled 'pigs trotter' and gnawing at it vigorously.
